Every Halloween, my family loves to carve pumpkins. Nothing says Happy Halloween better than a carved pumpkin with a candle inside to light it during the night. Unfortunately, every year we are left with plenty of pumpkin guts and pumpkin seeds. This year however, instead of throwing the pumpkin seeds away, I decided to roast them to use as a delicious snack for my kids. Roasted pumpkin seeds are easy to make so it is fun to involve the kiddos in the process. Check it out!

Supplies Needed

  • 3 cups pumpkin seeds
  • 1/4 cup melted butter
  • 1 tsp garlic powder
  • 1/2 tsp garlic salt

Step 1. Clean and dry your pumpkin seeds

Preheat your oven to 325 degrees. Clean your seeds by rinsing them off under the faucet and by removing any pumpkin chunks. Place the pumpkin seeds on a towel and allow them to dry.

Step 2. Mix your ingredients and pour over the pumpkin seeds

Melt the butter in the microwave. Take your garlic powder, garlic salt and melted butter and mix them all together. Pour the mixed ingredients over the dried pumpkin seeds. Spread the mixture around, making sure all of the pumpkin seeds are covered with the garlic butter mixture.

Step 3. Bake the pumpkin seeds

Place baking mats or parchment paper on two baking sheets. Take your pumpkin seeds and spread them evenly on the two baking sheets. Now, place both baking sheets into the oven and bake for 45 minutes to 1 hour. Check the seeds every 15 minutes or so, mixing them to bake them evenly. The seeds are done when they turn a nice light golden brown color.
